One-Bite Stuffed Potato Skins

I love potato skins, it always makes me happy to see them on a menu, but I never make them at home. Thanks to these one-bite stuffed potato skins though, this is a version that I can totally pull off at home! They're perfect for your next party or gathering, or just because when you want something different to snack on.

One-Bite Stuffed Potato Skins

  • 20 small red potatoes
  • ยฝ  cup real bacon bits
  • ยพ  cup cheddar cheese (shredded)
  • 1 tablespoon butter
  • Sour cream, (optional)
  • Green onions (optional)

The Process

-Fill a large pot with water and bring it to a boil.

-Add potatoes and boil until they are fork tender.

-Preheat oven to 400ยฐF

-Cut potatoes in halves and place on baking sheet.

-Scoop out the inside of each potato half saving the potato insides in a bowl.

-Add cheese, bacon bits & butter to the bowl with the mashed potato insides.

-Scoop mixture into potato halves and then place them back on the baking sheet.

-Place baking sheet in oven for 10 minutes.

-Remove from oven and top with remaining ยผ cup of shredded cheese.

-Serve with a dollop of sour cream and green onions.

Instructions

  4. Cut potatoes in halves and place on baking sheet.
  5. Scoop out the inside of each potato half saving the potato insides in a bowl.
  6. Add cheese, bacon bits & butter to the bowl with the mashed potato insides. 
  7. Scoop mixture into potato halves and then place them back on the baking sheet.
  8. Place baking sheet in oven for 10 minutes.
  9. Remove from oven and top with remaining ¼ cup of shredded cheese.
  10. Serve with a dollop of sour cream and green onions.
