Instant Pot Side Dish: Sweet Potatoes & Brussels Sprouts

Like most people my age, I arrived late to the brussels sprouts fandom. While my absolute favorite way is roasted with bacon, I actually love them prepared almost any way, and this easy Instant Pot side dish with brussels sprouts and sweet potatoes is sure to make an appearance on our Thanksgiving table this year. We think you'll love it too. It's so simple, and the pressure cooker takes a pot off your stovetop and leaves more room for something else… like dessert!
I use my Instant Pot year round, whether it's for super fast Sugar Cookie Steel Cut Oats, a batch of perfect hard cooked eggs, or my Simple Hands-Off Risotto, the IP has earned it's spot on our kitchen counter and is used several times a week.
Instant Pot Side dish
- 2 tbsp extra virgin olive oil
- 1 small yellow onion, diced
- 2 sweet potatoes
- Salt + pepper to taste
- 3/4 cup vegetable broth
- 1 pound Brussels sprouts
- Honey for drizzling
Dice onion into a rough chop.
Pour olive oil and diced onion in inner pot of Instant Pot.
Set Instant Pot to its sautรฉ setting and cook onion until translucent.
While the onions are heating up, peel and cut sweet potatoes into small bite-sized pieces.
Add sweet potatoes pieces into inner pot and sautรฉ for about 4-5 minutes. Season with salt and pepper and then turn off the sautรฉ function.
Add vegetable broth to onion and sweet potato mix. Top off with Brussels sprouts.
Close the lid to the Instant Pot and set on manual pressure high for 3 minutes.
Once time is up, allow for a QPR (Quick Pressure Release)
Serve with a drizzle of honey on top. Add more salt and pepper if desired.

Instant Pot Sweet Potatoes and Brussels Sprouts are the perfect side dish for Thanksgiving or any meal!
Ingredients
- 2 tbsp extra virgin olive oil
- 1 small yellow onion, diced
- 2 sweet potatoes
- Salt + pepper to taste
- 3/4 cup vegetable broth
- 1 pound Brussels sprouts
- Honey for drizzling
Instructions
- Pour olive oil and diced onion in inner pot of Instant Pot.
- Set Instant Pot to its sauté setting and cook onion until translucent.
- While the onions are heating up, peel and cut sweet potatoes into small bite-sized pieces.
- Add sweet potatoes pieces into inner pot and saute for about 4-5 minutes. Season with salt and pepper and then turn off the sauté function.
- Add vegetable broth to onion and sweet potato mix. Top off with Brussels sprouts.
- Close the lid to the Instant Pot and set on manual pressure high for 3 minutes.
- Once time is up, allow for a QPR.
- Serve with a drizzle of honey on top. Add more salt and pepper if desired.
- Enjoy!
