We're celebrating Jamie's mom's and nephew's birthdays tonight, and I just finished making their cake this morning.
I had a request for chocolate, and one of Jamie's mom's favorite flavor combos is chocolate and orange, so I wanted to coordinate that as well. I made a Devil's Food Cake with orange buttercream frosting and an creamy marmalade filling.
Devil's Food Cake
2 T. butter
2 C. sugar
2 eggs
1 t. vanilla extract
1 C. buttermilk
2 1/2 C. flour
1/2 C. cocoa
2 t. baking soda
1/2 t. salt
1 C. hot water
Grease and flour 2 9″ pans.
Cream together butter and sugar; add eggs one at a time, mixing each one in completely.
Add vanilla.
Combine flour, cocoa, soda and salt.
Add to creamed mixture, alternating with buttermilk.
Add water, mix well. (Batter will be thin)
Bake at 350 for 20-25 minutes
Orange Buttercream Frosting
1 lb. box of powdered sugar
1/4 C. thawed orange juice extract
1 tsp. vanilla extract
1 stick salted butter (softened)
1 t. grated orange rind
Splash of water (about 1 1/2 T.)
Beat together all ingredients except orange rind.
Add rind to well mixed frosting.
Creamed Marmalade Filling
1/4 C. Orange Buttercream
3/4 C. orange marmalade
Mix well and spread between layers.
I totall cheated and bought the pre-made chocolate curls for the top of this cake, but you could just sprinkle some cocoa or orange rind… lots of choices fo garnish with this one!
Let me know if you make either one and what you think!
