Instant Pot Sausage & Peppers Pasta

We tend to have friends over for dinner a lot during this time of year; the approaching holidays make us want to spend time with the people we love. This Instant Pot penne pasta dish is perfect for casual entertaining, because it's quick and so easy, and doesn't require a lot of babysitting, so you can visit with your guests instead of worrying about a pot boiling over.

Instant Pot Sausage & Peppers Pasta

Prep time:  10 mins

Cook time:  15 mins

Total time:  25 mins

Serves: 4 servings

Ingredients
  • 1 lb. Italian Sausage
  • 4 bell peppers, diced
  • 1 small onion, diced
  • 28 oz. canned tomatoes
  • 15 oz. tomato sauce
  • 1 c. water
  • ½ c. Clos du Bois Cabernet
  • 1 T. Basil
  • 1 T. Italian Seasoning
  • 4 Cloves Minced Garlic
  • 1 box Barilla Penne pasta
Instructions
  1. Brown the sausage on sauté mode in Instant Pot.
  2. Once sausage is browned, add all sauce incredients (everything but pasta)
  3. Stir to combine.
  4. Manual mode for 10 mins, then QR
  5. Add ½ box penne to Instant Pot and stir to combine.
  6. Reseal Instant Pot and set manual mode 7 minutes, then QR
  7. Stir and serve with grated parmesan cheese.

    I’m confused by the use of “OR” after the additions here.
    Also, if I double this to use the entire box of penne, how many peppers, etc., do you suggest?

    PS: I see on my desktop that that is QR not OR. I know QR. Still want to know about doubling this, tho! Thanks!

      Hi! I’m not sure about doubling it… you need to be careful with stuff like pasta because it tends to bubble up quite a bit inside and you don’t want to overfill the pot before it’s pressurized. I’d just experiment to see how it goes with what’s called for first, and maybe add stewed tomatoes at the end if I needed more bulk.
