Easy Eggs Benedict with 5 min Hollandaise

When Jamie and I first started dating, we went out to breakfast nearly every weekend. Long, lazy brunches where mimosas and benedict were the norm. Now, our weekend breakfasts are more sustenance than leisure, and are often grabbed on our way out the door for some activity. But not always. Lucky for me, Jamie has perfected his easy 5-minute hollandaise sauce, so we can make our own whenever we want.

I've been known just to put it over scrambled eggs (or asparagus! YUM!) but sometimes we want to fancy it up a little bit, even if we're staying home. So that's where our own version of Eggs Benedict comes in! Yummy Bay's English Muffins piled with juicy ham, a perfectly fried egg and a whole lot of that hollandaise sauce.

This is where I tell you that I'm new to Bay's, and we're totally hooked. They're delicious and chewy, and hold up perfectly no matter what you pile on them! They're found in the dairy case next to the eggs, not in the bread aisle, but they're totally worth the extra effort to hunt them down. They're available in four flavors, too! Easy Hollandaise

  • 1 Egg Yolk
  • 1 T. Lemon Juice (Fresh Squeezed)
  • 1 T. Water
  • Pinch Salt
  • 1/2 C. Butter

Don't be intimidated by stories of broken sauces! This is so easy to make, you'll find yourself craving it on a regular basis.

  1. Melt a stick of butter in a small saucepan
  2. Separate the egg and put the yolk in a small cup. The cup should be of a size that your immersion blender fits well into it and can reach the bottom.
  3. Add lemon juice, water, and salt to yolk.
  4. Put immersion blender into cup, and then stream melted butter in, while running immersion blender.
  5. You're done! (Seriously. It's that easy)
