Raspberry Meringue "Chem-Balls"

Serves: 2 dozen
- 4 egg whites
- 1 c. sugar
- ½ t. Cream of Tartar
- 1 box Jell-O (I recommend raspberry for the pink)
- Preheat oven to lowest temperature possible. (Mine goes down to 170)
- Beat the egg whites in a stand mixer until stiff peaks form.
- Add sugar and cream of tartar, mix well.
- Add Jell-O powder, a little at a time, until the desired color/flavor is achieved.
- (I used about half a box of the 6 oz. size for these)
- Pipe meringues onto parchment paper-covered cookie sheet.
- (No need to leave space for spreading, but you don't want them to touch, either!)
- Bake at 170 for about 3 hours, then turn oven off and leave meringues in oven overnight to continue drying.
- Store in airtight container.
